grill to medium to high heat. Use mesquite chips both on the charcoal or gas grill
Core the tomatoes and cut an X on the bottom. Place tomatoes in a metal cooking
basket. When tomatoes begin to blister and darken turn over. You want to
darken all sides.
Remove from grill and in a bowl to cool. You want the tomatoes cool to the touch.
Peel the tomatoes and chop coarsely. Keep the juice.
