Sweet Potatoes with Pineapple - Orange Glaze

Makes 6 servings Side Dish Recipes from AlansKitchen.com

Ingredients:

  • 1 - quart water

  • 4 - sweet potatoes

  • 1/4 - teaspoon salt

  • 1/8 - teaspoon freshly ground pepper

  • 3/4 - cup orange marmalade

  • 3/4 - cup Pineapple/Papaya Marmalade

  • 1/3 - cup orange juice

  • 1/2 - teaspoon salt

  • 1 - Tablespoon butter

Directions:

Preheat oven to 325 F. and butter flavored non-stick spray casserole dish.

  1. In a large pot, add water, sweet potatoes, salt and pepper.  Over medium heat, bring to a boil and cook until fork tender.  Remove and drain in a colander. 

  2. Pour under cold water to stop the cooking.  When cool, peel sweet potatoes and slice into thick slices.  Place in a large mixing bowl. 

  3. Add the sweet potatoes, orange marmalade, Pineapple - Papaya Marmalade, and orange juice. Toss lightly.  In the casserole dish, layer the potato mixture. Sprinkle with salt and dot with butter.  Bake for 30 to 40 minutes or until browned and candied.
