20-Minute Cowboy Beans
Makes 6 servings

4 - slices bacon
1 - cup onion, finely chopped
1/2 - cup green bell pepper, finely chopped
1 - clove garlic, crushed
1 - can (15 to 16 ounces) kidney beans, rinsed, drained
1 - can (15 to 16 ounces) pinto beans, rinsed, drained
3/4 - cup barbecue sauce
1 - Tablespoon packed brown sugar
In large skillet over low heat, add your bacon and
cook until crisp, turning occasionally. Remove from skillet and drain on
paper towels. Remove all but 2 tablespoons drippings from skillet. Into skillet over medium heat, add the onion, bell pepper and garlic.
Now, cook and stir for 3 to 5 minutes or until tender. Stir in the
kidney and pinto beans, barbecue sauce and brown sugar.
and return to skillet. Finally, cover; cook for 5 minutes or until
heated through. You want to stir occasionally.
You want to make this recipe a day or two ahead.
Just heat and place in thermos or thermal containers and head to the
