Diablo Tomatoes

Ingredients:
- Sauce
- 2
Tablespoons butter
- 1
teaspoon confectioners' sugar
- 1
teaspoon dry mustard
- 1
teaspoon salt
- 1/8 teaspoon pepper
- 1
yolk, hard-cooked egg, mashed
- 1
raw egg, beaten
- 1-1/2 Tablespoon hot vinegar
- Coating
- 1/4 cup flour
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 3 tomatoes, cut in thick slices
- 4 Tablespoons butter
Directions:
- Over low heat in a
sauce pan, melt butter. To melted butter, add sugar, mustard, salt,
pepper, egg yolk, raw egg, and vinegar.
- Stir mixture until thick and
set aside.
- In a small dish, mix flour, salt and
pepper. Coat each tomato slice in the mixture.
- In a frying pan, melt butter.
- Brown
both tomatoes slice sides until golden brown. Pour sauce over tomatoes
and serve.
