Checkered Flag Chicken Mexi-Melt

Makes 4 servings

Prep Time: 25 min
Microwave: HIGH 3 min

Ingredients:

  • 2     cups chopped cooked chicken
  • 1/2  cup thinly sliced green onions
  • 1     package (1.25-ounces) Taco Seasoning Mix
  • 1     package (10.5-ounces) package (12 shells) Soft Taco Shells
  • 1     jar (16-ounces) Thick 'n Chunky Picante salsa
  • 6     ounces (1-1/2 cups) shredded Monterey Jack cheese

Directions:

  1. In medium bowl, combine chicken, onions and taco seasoning mix; mix well.
  2. For each serving, place 1 soft taco shell on microwave-safe plate.
  3. Spread with 1 tablespoon picante salsa.
  4. Top with 1/4 cup chicken mixture and 2 tablespoons cheese.
  5. Repeat layers 2 more times.
  6. Microwave 1 serving at a time on HIGH for 2 1/2 to 3 minutes or until cheese is melted, rotating plate 1/4 turn after 1 1/2 minutes.
  7. Cut into wedges; serve immediately.
  8. To make ahead, assemble stacks and cover tightly with plastic wrap; refrigerate up to 24 hours before microwaving.
  9. Uncover; microwave individual servings as directed above.
