Makes 4 Servings
- Sauté onions and
garlic in the bacon fat for 2 minutes or until onions are translucent.
Add salsa and salt and cook for 30 minutes, stir occasionally.
- In a separate
skillet, fry the tortillas in hot oil until soft. (You can use the
microwave to heat the tortillas.
- Just place tortillas between paper towels
and heat for 2 minutes.)
- Drain and remove to heated plates, 2 to each
- Fry eggs in tortillas
skillet, place eggs onto the tortillas, spoon on the salsa sauce and
