Baking Time: 1 hr

  • 1 - Tablespoon baking powder

  • 1/4 - teaspoon salt

  • 1 - teaspoon baking soda

  • 1 - Tablespoon ground cinnamon

  • 3 - eggs

  • 2 - cup sugar

  • 1 - cup vegetable oil

  • 2 - teaspoon vanilla

  • 4 - apples, unpeeled, cored and grated

  •       Lemon Glaze (see below)

Preheat oven to 350 F and grease & flour Bundt pan.

  1. First, into a medium mixing bowl, sift together the flour, baking powder, salt, baking soda, and cinnamon.

  2. Into a large electric mixing bowl, add the eggs and beat at medium speed. Add the sugar and continue to beat the mixture. Next, add the oil and vanilla and continue to beat the mixture. Slowly add in the flour mixture and continue to beat. Remove bowl from mixer.
