Apple-Pecan Bundt

Ingredients:

3 - cup all-purpose flour

1 - Tablespoon baking
powder

1/4 - teaspoon salt
-
1 - teaspoon baking soda
-
1 - Tablespoon ground
cinnamon

3 - eggs
-
2 - cup sugar
-
1 - cup vegetable oil
-
2 - teaspoon vanilla
-
4 - apples, unpeeled, cored
and grated

1 - cup pecans

Lemon Glaze (see below)
Directions:
Preheat oven to 350° F and grease &
flour Bundt pan.

First, into a medium mixing bowl, sift
together the flour, baking powder, salt, baking soda, and
cinnamon.

Into a large electric mixing bowl, add
the eggs and beat at medium speed. Add the sugar and continue
to beat the mixture. Next, add the oil and vanilla and
continue to beat the mixture. Slowly add in the flour mixture
and continue to beat. Remove bowl from mixer.

Into the batter, stir in the apples.
Next, stir in the pecans. Pour mixture into Bundt pan. Place
pan in oven and bake 1-hour or until top springs back. Onto a plate, turn out the cake and allow
to cool. The cake is very moist; however, you can leave it or
add a glaze. The Lemon Glaze works well.
Lemon Glaze
Ingredients:
Directions:

Into a small bowl, add the confectioners'
sugar.

Then slowly mix in the milk and lemon
juice.

Pour over cake.
