Southwest Cheese Bread

Makes 32 Servings

Prep Time: 10 min.
Baking Time: 5 min.
Total Time: 15 min.


  • 1/4 - cup mayonnaise or salad dressing

  • 2 - Tablespoons finely chopped bell pepper

  • 2 - Tablespoons finely chopped green onion

  • 1 - teaspoon chopped fresh cilantro or parsley, if desired

  • 8 - slices French bread (1/2 inch thick)

  • 1/2 - cup shredded Colby-Jack cheese (2 ounces)

  • 32 - cherry tomatoes

  • 32 - pieces fresh cilantro


Preheat oven to 400 F.

  1. In a medium bowl, mix mayonnaise or salad dressing, finely chopped bell pepper, finely chopped green onion, and chopped fresh cilantro or parsley.

  2. Spread on one side of each bread slice. Sprinkle with cheese. Place on ungreased cookie sheet.

  3. Bake for 5 to 6 minutes or until cheese is melted and bread is slightly toasted on bottom.  After baking, cut each slice into halves or fourths. Top each with a slice of cherry tomato and a piece of fresh cilantro.
