Southern Home CookingCream of Peanut Soup
Makes 6 servings

Prep Time: 15 min.
Cooking Time: 30 to 45 min.

Ingredients:

  • 1 - quart chicken broth
  • 2 - carrots, chopped
  • 1 - yellow onion, peeled and chopped
  • 1 - cup smooth-style peanut butter
  • 1 - whipping cream or half-and-half
  • 1/2 - dry-roasted peanuts
  • Salt (to taste)
  • Pepper (to taste)
  • Tabasco (to taste)

Directions:

  1. In a 2-quart pot, pour in the chicken broth and add your carrots and onion.
  2. Bring to a boil and turn down to a simmer.
  3. Cook, covered, until the vegetables are very tender.
  4. In a food processor, puree and return to the pot.
  5. Stir in the peanut butter, cream or half-and-half, peanuts, salt, pepper, and Tabasco.
  6. Bring to a simmer and serve.
