Cream
of Peanut Soup
Makes 6 servings
Prep Time: 15 min.
Cooking Time: 30 to 45 min.
Ingredients:
- 1 - quart chicken broth
- 2 - carrots, chopped
- 1 - yellow onion, peeled and chopped
- 1 - cup smooth-style peanut butter
- 1 - whipping cream or half-and-half
- 1/2 - dry-roasted peanuts
- Salt (to taste)
- Pepper (to taste)
- Tabasco (to taste)
Directions:
- In a 2-quart pot, pour in the chicken
broth and add your carrots and onion.
- Bring to a boil and turn down to a simmer.
- Cook, covered, until the vegetables are
very tender.
- In a food processor, puree and return to
the pot.
- Stir in the peanut butter, cream or
half-and-half, peanuts, salt, pepper, and Tabasco.
- Bring to a simmer and serve.
