Rock Gap Pineapple Yams

Ingredients:

4 - Tablespoon butter

3 - Tablespoon brown sugar

2 - Tablespoon light cream

4 - slices pineapple
-
2 - cup mashed cooked yams (or sweet potatoes)

1/4 - cup milk

1/2 - teaspoon salt
-
1/2 - teaspoon pepper
Directions:

Into a small saucepan, add 2
tablespoons butter and brown sugar.

Over low heat, blend.

Stir in the cream.

Now add a slice of pineapple at a
time, turning so that you glaze both sides.

Remove pineapple slices to a heated
plate or thermal container.

In the saucepan, add the yams, milk,
2 tablespoons butter, salt, and pepper.

Beat the ingredients until they
become fluffy.
-
Now spoon ingredients over pineapple
slices and serve.
