Bama's Baby Blue Salad

Southern Home CookingMakes 6 servings
Prep Time: 10 min.

Ingredients:

  • 3/4 - pound mixed salad greens
  • Balsamic Vinaigrette (see below)
  • 4 - ounces blue cheese (crumbled)
  • 2 - oranges (peeled and cut into thin slices)
  • 1 - pint strawberries (quartered)
  • Sweet & Spicy Pecans

Directions:

  1. You want to toss greens with Balsamic Vinaigrette and crumbled blue cheese.  (Place on 6 individual plates.)
  2. Arrange orange slices over greens & blue cheese.
  3. Sprinkle with strawberries.
  4. Top with Sweet & Spicy Pecans.

Balsamic Vinaigrette

Makes 1-2/3 cups
Prep Time: 5 min.

Ingredients:

  • 1/2 - cup balsamic vinegar
  • 3 - Tablespoon Dijon mustard
  • 3 - Tablespoon honey
  • 2 - garlic cloves (minced)
  • 2 - small shallots (minced)
  • 1/4 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 1 - cup olive oil

Directions:

  1. In a bowl, whisk together the vinegar, mustard, honey, garlic, shallots, salt, and pepper.
  2. Gradually whisk in olive oil.

Sweet & Spicy Pecans

Makes 1 cup
Prep Time: 5 min.
Soaking Time: 10 min.
Baking Time: 10 min.

Ingredients:

  • 1/4 - cup sugar
  • 1 - cup warm water
  • 1 - cup pecan halves
  • 2 - Tablespoons sugar
  • 1 - Tablespoon chili powder
  • 1/8 - teaspoon ground red pepper

Directions:

  1. In a mixing bowl, stir together 1/4-cup sugar and 1-cup warm water under you dissolve sugar. 
  2. Add pecan halves and soak for 10 minutes.
  3. Drain and discard sugar mixture.

Preheat oven to 350 F. Lightly grease baking sheet.

  1. In another mixing bowl, combine 2-Tablespoons sugar, chili powder, and red pepper.
  2. Add pecans and tossing to coat.
  3. Place on a lightly greased baking sheet.
  4. Bake for 10 minutes, stirring once.
