Southern Home CookingApricot Jello Salad
Makes 6 to 8 servings

Prep Time: 15 min.
Chilling Time: 2 hrs.


  • 1 - can (17-ounces) apricots
  • 1 - package (3-ounces) lemon (apricot) Jello
  • 1/2 - cup celery, finely chopped
  • 1/2 - cup walnuts, chopped
  • 1/2 - cup frozen whipped topping, thawed
  • 1/3 - cup mayonnaise


  1. You want to drain the apricots, reserving the syrup. Add water to syrup to make 1-cup of liquid.
  2. Into a saucepan, add the liquid and bring to a boil.  Add Jello, stirring to dissolve, allow to cool.
  3. Chop apricots, and add celery, walnuts, topping, and mayonnaise.  Stir into gelatin.
  4. Pour into a 4-cup molds and chill for 2 hours or until firm.
