Bourbon-Honey
Pork Tenderloin Kabobs
Makes 4 servings
Ingredients:
- 1 - tenderloin, about 1-1/2 pounds, cut into
24 one-inch cubes
- 1/2 - cup bourbon
- 1/2 - cup honey
- 1/2 - cup yellow mustard
- 1 - teaspoon dried tarragon
- 3 - sweet potatoes, cut into 8 pieces
- 4 - medium ripe, unpeeled peaches, pitted
and quartered
- 4 - green bell peppers, each cut into 8
pieces
Directions:
Preheat grill to medium-hot fire according to
manufacturer’s directions.
- In a bowl, add bourbon, honey, mustard and
tarragon.
- Stir and set aside.
- Steam or boil sweet potatoes until
crisp-tender.
- Thread 3 sweet potato cubes, 3 pork cubes, 2
peach quarters, and 4 pepper pieces alternately onto each of eight 10-inch
skewers.
- Brush kabobs with honey mixture.
- Lightly oil grill.
- Grill kabobs, basting occasionally, for 5
minutes on each side or until done (internal temp 155° F).
