Oatmeal - Coconut Crispy Cookies
Southern Home CookingMakes 3-1/2 dozens

Prep Time: 10 min.
Baking Time: 10 min. (per batch)

Ingredients:

  • 1/2 - cup butter or margarine (softened)

  • 1/2 - cup brown sugar (firmly packed)

  • 1/4 - cup sugar

  • 1 - large eggs

  • 1 - cup all-purpose flour

  • 1/2 - teaspoon baking soda

  • 1/4 - teaspoon baking powder

  • 1/4 - teaspoon salt

  • 1 - cup uncooked regular oats

  • 1 - cup crisp rice cereal

  • 1/2 - cup flaked coconut

  • 1/2 - cup pecans (chopped)

Directions:

Preheat oven to 350° F.  Lightly grease baking sheets.

  1. With an electric mixer at medium speed, beat butter or margarine, brown sugar, and sugar until fluffy.

  2. Add egg, beating until blended.

  3. Gradually add flour, baking soda, baking powder, salt and oats (beating at low speed) until blended.

  4. You want to stir in rice cereal, coconut, and pecans.

  5. Using a tablespoon, drop onto baking sheets.

  6. Bake for 10 minute or until gold brown.

  7. Remove to wire racks to cool.
