Chunky Apple Cake (with Cream Cheese Frosting)

  • 1/2 cup butter, melted
  • 2    cups sugar
  • 2    large eggs
  • 1    teaspoon vanilla extract
  • 2    cups all-purpose flour
  • 1    teaspoon baking soda
  • 1    teaspoon salt
  • 2    teaspoon ground cinnamon
  • 4    Granny Smith apples, peeled and sliced
  • 1    cup chopped walnuts, toasted
  • Cream Cheese Frosting (see below)
  • Chopped walnuts, toasted (optional)


Preheat oven to 350 F. Grease 13x9-inch pan.

  1. In a large bowl, stir together butter, sugar, eggs, and vanilla extract until blended.
  2. In a large bowl, combine flour, baking soda, salt, and cinnamon.
  3. Add flour mixture to butter mixture, stirring until blended.
  4. Stir in apple and 1 cup walnuts.
  5. Spread into 13x9-inch pan.
  6. Bake for 45 minute or until a wooden pick inserted in the center comes out clean.
  7. Cool completely in pan on a wire rack.
  8. Spread with Cream Cheese Frosting. Sprinkle with walnuts.

Cream Cheese Frosting

Makes 1-2/3 cups
Prep Time: 20 min


  • 1        package (8-ounce) cream cheese, softened
  • 3        Tablespoons butter or margarine, softened
  • 1-1/2  cups powdered sugar
  • 1/8     teaspoon salt
  • 1        teaspoon vanilla extract


  1. In an electric mixer at medium speed, bean cream cheese and butter until creamy.
  2. Gradually add sugar and salt, beating until blended.
  3. Sire in vanilla.
