Cinnamon Pecan Pancakes

Southern Home Cooking Makes 8 to 10 (4 or 5-inch) pancakes

Prep Time: 10 min.
Cooking Time: 10 min.


  • 1/2      cup regular oats
  • 1-1/2   cups milk
  • 2         eggs, beaten
  • 1/4      cup melted shortening or oil
  • 1-1/4   cups flour
  • 2         Tablespoons sugar
  • 1         Tablespoon baking powder
  • 1          teaspoon salt
  • 3/4       teaspoon cinnamon
  • 1/2       cup raisins
  • 1/2       cup pecans, chopped


  1. In a large mixing bowl, combine oats and milk. Let stand 5 minutes.
  2. Add eggs and shortening and mix well.
  3. In another large mixing bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  4. Pour oat-milk mixture into flour mixture and stir to blend.
  5. Stir in raisins and pecans.
  6. Pour pancake batter onto a nonstick or lightly greased griddle.
  7. Cook until tops are slightly dry around edges and bubbly in middle.
  8. Turn and cook other side. (Turn only once.)
  9. Serve with your favorite syrup.
