Asparagus Rollups
Makes 12 appetizer servings

Prep Time: 25 min.
Baking Time: 12 min.

Ingredients:

  • 24 - fresh asparagus spears

  • 1 - package cream cheese (softened)

  • 1 - package (4-ounce) crumbled blue cheese

  • 2 - Tablespoons mayonnaise

  • 1 - Tablespoon fresh chives (chopped)

  • 12 - bread slices (trimmed)

  • 12 - thinly sliced deli ham slices

  • 1/4 - cup butter or margarine (melted)

  • Paprika

Directions:

Preheat oven to 400° F. Grease baking sheet.

  1. Snap off tough ends of asparagus.  Arrange asparagus in a steamer basket over boiling water.

  2. Cover and steam 4 to 6 minutes or until crisp-tender.

  3. Remove from steamer and cool.

  4. In a small bowl, stir together cream cheese, blue cheese, and mayonnaise.

  5. Roll each bread slice with a rolling pin to flatten.  

  6. Spread 1 side of each slice with 2-Tablespoons cream cheese mixture.

  7. Top with 1 ham slice.

  8. Place 2 asparagus spears, tips toward opposite ends, on 1-end of each bread slice.

  9. Roll up and place (seam side down) on a greased baking sheet.

  10. Brush with butter, sprinkle with paprika.

  11. Bake for 12 minutes or until golden.  Serve immediately.

Kitchen Tip: Freeze unbaked rollup up to 1 month in an airtight container.  Thaw in refrigerate and bake as directed.
