Chicken Tarragon Soup
Makes 4 servings.

Prep Time: 10 minutes

Cooking Time: 10 minutes

Ingredients

1 - cup chopped onion
1/2 - cup sliced celery
1 - clove garlic, crushed
2 - Tablespoons butter or margarine
2 - cans (13-3/4 fl. ounces each) chicken broth
1 - can (8 ounces) mixed vegetables
1 - can (14-1/2 ounces) Italian stewed tomatoes
1 - cup diced cooked chicken
1 - Tablespoon parsley flakes
1/4 - teaspoon tarragon, crumbled

Directions

  • In a skillet at medium heat, add butter and melt. 
  • Next, add in your onion, celery and garlic and sauté for 5 minutes.
  • Next, add the broth, mixed vegetables, tomatoes, chicken, parsley and tarragon. 
  • You want to bring to boil and reduce heat. 
  • Cover and simmer for 5 minutes.

Picnicking & Tailgating

Heat (on stove or in microwave) and pour into a thermos.  When you get to the picnic or tailgate site, just pour and enjoy.
