15-Minute Albondigas Soup

Soup, Stew, and Chowder Recipes from AlansKitchen.comMakes 4 (1-3/4 cup) servings

Prep Time: 15 minutes

Cooking Time: 10 minutes

Ingredients

  • 2  cans (14 ounces each) ready-to-serve beef broth
  • 2  cup frozen corn
  • 1  cup prepared salsa
  • 1  package fully-cooked beef meatballs
  •      Tortilla chips (garnish)
  •      Cilantro, chopped (garnish)

Directions

1) In medium saucepan over medium heat, you will add the beef broth, corn and salsa. 

2) Bring to a boil and simmer for 5 minutes.

3) For now, microwave meatballs according to package directions.

4) Then add the meatballs to soup mixture and serve. 

5) Garnish with crumbled tortilla chips or chopped cilantro.

Alan's Kitchen Tip:
Heat (on stove or in microwave) and pour into a thermos.  When you get to the picnic or tailgate site, just pour and enjoy.
