Fast and Fantastic Black Bean Soup

Makes 2 (1-1/4 cups each) servingsSoup, Stew, and Chowder Recipes from AlansKitchen.com

Prep Time: 10 min.
Cooking Time: 6 min.

Ingredients

  • 1 - cup fat-free reduced-sodium chicken broth

  • 1 - can (15 oz.) black beans, drained, rinsed

  • 1/4 - cup Thick 'N Chunky Medium Salsa

  • 2 oz. VELVEETA®, cut into 1/2-inch cubes

Directions

  1. PLACE broth, beans and salsa in blender and blend for 1 minute or until smooth.

  2. POUR into medium saucepan and cook on medium heat for 5 minutes or until heated through, stirring occasionally.

  3. ADD VELVEETA and cook for 1 minute or until melted, stirring constantly.

Alan’s Kitchen Tips

  • Substitute 2 Singles or 2% Milk Singles for the cubed VELVEETA.

  • Special Extra: Garnish each serving with a dollop of Sour Cream and a light sprinkling of chopped green onions.
