American Onion Soup
Makes 6 servings
Time: 20 min.
Cooking Time: 1 hr.
In a soup pot, melt butter.
Add onions and
cook, stirring occasionally, over medium heat until golden brown.
Add garlic and cook for 1 minute.
In a shaker, mix flour and
3/4 cup of chicken broth.
Add flour mixture to the soup pot
along with the remaining chicken broth.
Add thyme and white
Bring to a boil, reduce heat, and simmer for 1 hour or
until onions are very tender.
Add sherry and add salt and
pepper to taste.
If desired, spoon soup into
individual ovenproof bowls. Top with a piece of French bread and
sprinkle with freshly grate Parmesan cheese. Place under the
broiler until cheese melts.
