Hayes Black-Walnut Bisque
Makes 4 servings.

3 � tablespoons butter

3 � tablespoons flour

4 � cups beef stock

1/2 - teaspoon dried marjoram

1/2 - bay leaf

1 � teaspoon salt

1/8 � teaspoon cayenne pepper

1 � cup black-walnut meat, crushed

1/2 - cup sour cream

1/2 - cup heavy cream

  • In a large saucepan, melt the butter, stir in the flour until smooth, and then gradually stir in the stock.  
  • Add the marjoram, bay leaf, salt, and cayenne pepper. 
  • In a small mixing bowl, add together the walnuts and sour cream. 
  • Stir into the stock.  
  • Cook for two minutes. 
  • Remove from heat and stir in the cream.

Picnicking & Tailgating

Heat (on stove or in microwave) and pour into a thermos.  When you get to the picnic or tailgate site, just pour and enjoy.
