Goulash Soup
Makes 4 to 6 servings.

2 � pounds stewing beef, cut into 1-1/2-inch chunks

1 � tablespoon flour

1 � teaspoon salt

2 � teaspoons Hungarian paprika (hot or sweet)

1/8 � teaspoon cayenne pepper

2 � tablespoons olive oil

1 � onion, chopped

1 � clove garlic, chopped

1 � green bell pepper, chopped

1 � teaspoon tomato paste

1/2 - cup dry red wine

1 � pint sour cream

  • Into a paper bag, add meat, flour, salt, paprika, and cayenne and shake until meat is well coated.
  • Heat oil in a heavy skillet.  Saut� the onions, garlic, bell pepper, and tomato paste a few minutes.  Remove and set aside.  Add the meat and brown.  Add wine.  Re-add back in the saut� onion mixture.  Simmer about 1-1/2 hours or until meat is tender.
  • Stir in the sour cream, cover, and simmer for an additional 10 minutes.  Serve with hot noodles.

Picnicking & Tailgating

Heat (on stove or in microwave) and pour into a thermos.  When you get to the picnic or tailgate site, just pour and enjoy.
