Vegetable Curry
Makes 6 servings.
Cooking Time: LOW 8 to 9 hrs.
Ingredients
4 - medium potatoes, peeled and diced
1 - large onion, chopped
1 - red pepper, chopped
2 - carrots, diced
2 - large tomatoes, chopped
1 - can (6-oz.) tomato paste
3/4 - cup water
2 - Tablespoon curry powder
2 - teaspoon cumin seeds
1/2 - teaspoon garlic powder
1/2 - teaspoon salt
3 - cups cauliflower florets
1 - package (10-ounces) frozen peas, thawed
Directions

In the slow cooker, place potatoes, onion,
pepper, carrots and tomatoes.

Stir in tomato paste, water, curry powder,
cumin seeds, garlic powder and salt.

Mix well and add the cauliflower
florets.
- Cook on LOW for 8 to 9 hours.

Stir in peas just before serving.
