Sweet Potato Casserole
Makes 6 to 8

Cooking Time: HIGH 3 – 4 hours
2 - pounds sweet potatoes, mashed
1/2 - cup margarine or butter, melted
2 - Tablespoons sugar
2 - Tablespoons brown sugar
1 - Tablespoons orange juice
2 - eggs, beaten
1/2 - cup milk
1/3 - cup pecans, chopped
1/3 - cup brown sugar
2 - Tablespoons flour
2 - Tablespoons margarine or butter, melted
Lightly grease the 3 to 4-1/2 quart slow
cooker.
- In a large bowl, mix the sweet
potatoes, 1/3-cup margarine, sugar and brown sugar.
- Beat in the orange juice, eggs and
milk.
- Transfer to slow cooker.
- In a bowl, mix pecans, 1/3-cup brown
sugar, flour and 2 tablespoons margarine.
- Spread over the potatoes.
- Cover and cook on HIGH for 3 to
4 hours.
