Slow Cooker Classic Boston Baked Beans
Slow Cooker Recipes from AlansKitchen.com Makes 8 servings

Prep Time: 15 minutes
Cooking Time (Beans): LOW 3 hours
Cooking Time (Mixed): LOW 10 to 12 hours or HIGH 6 to 8 hours

Ingredients

  • 2 - pound dried small white beans

  • 12 - cups water

  • Olive oil

  • 1/4 - cup salt pork or thick sliced bacon, chopped into small pieces

  • 2 - teaspoons salt

  • 1 - cup molasses

  • 2 - Tablespoons dry mustard

  • 1/2 - cup dark brown sugar

  • 1/2 - cup onions, chopped

Directions

  1. Soak beans at least 8 hours or overnight.

  2. Place soaked beans in slow cooker.

  3. Cover and cook on LOW for 3 hours.

  4. Drain liquid, keeping 1-cup.  

  5. Keep beans in slow cooker.

  6. Add oil to sauté pan and brown pork or bacon.

  7. Add 1-cup of liquid, salt, molasses, mustard, brown sugar, and onions.

  8. Cook for 10 minutes.

  9. Add mixture into beans in slow cooker.

  10. Cover and cook on LOW for 10 to 12 hours or on HIGH for 6 to 8 hours.
