Italian Chicken Sandwiches

Makes 4 to 6 servings Slow Cooker Recipes from AlansKitchen.com

Cooking Time: 8 hours on LOW or 6 hours on HIGH

Ingredients:

  • 3 - pounds boneless, skinless chicken breasts

  • 1 - Tablespoon olive oil

  • 1 - envelope Italian dressing mix

  • 4 to 5 - pepperoncini, about 1 jar

  • 1 - cup reserved pepperoncini juice, from jar

  • Sweet Hawaiian mini sub rolls

  • provolone cheese slices

Directions:

  1. Brown chicken breasts in skillet in olive oil for a few minutes on each side. Then place in slow cooker. Sprinkle about half package of Italian dressing mix on top.

  2. Pour pepperoncini juice over chicken. Sprinkle remaining seasoning and chopped pepperoncinis on top of chicken. Cover and cook on HIGH for 6 hours or LOW for 8 hours.

  3. When chicken is finished, use two forks to shred the meat mixing in juices, peppers and seasonings. Place about half cup of meat on halved sub roll with slice of provolone cheese.
