Pulled Pork Sandwiches (2)

Makes 8 servings Slow Cooker Recipes from AlansKitchen.com

Cook Time: 8-10 hours on LOW or 4-6 hours on HIGH

Ingredients:

  • 2-1/2 - pounds boneless pork roast

  •    1/2 - teaspoon kosher salt

  •    1/4 - teaspoon pepper

  •     18 - ounces your favorite barbecue sauce

  •    2/3 - cup mayonnaise

  •       8 - sweet buns, split and toasted

  •     16 - slices sweet pickle

Directions:

  1. Season the roast with salt and pepper. Place in the slow cooker and cover with the barbecue sauce.  Cover and cook on LOW 8 to 10 hours (or on HIGH 4 to 6 hours).

  2. Cool slightly and shred the pork roast using two forks. Mix the sauce with the meat.

  3. To assemble the sandwiches, spread the mayonnaise on the buns and pile the pulled pork on top. Top each sandwich with two slices of pickle and serve at once.
