Sausage and Pepper Submarine Sandwiches

Makes 10-12 servings Slow Cooker Recipes from AlansKitchen.com

Cooking Time: 4-6 hours on LOW or 2-4 hours on HIGH

Ingredients:

  • 6 - red bell peppers, sliced thin

  • 4 - yellow onions, sliced thin

  • 1/4 to 1/2 - cup extra-virgin olive oil, divided

  • 2 - teaspoons dried parsley flakes

  • 2 - teaspoons salt

  • 1 - teaspoon ground black pepper

  • 2 - teaspoons red pepper flakes, optional

  • 4 - pounds hot or sweet Italian sausage

  • Submarine rolls

Directions:

  1. Place the sliced peppers and onions in the slow cooker.  Drizzle with 2 tablespoon of oil and add dried parsley flakes, salt, ground black pepper, and red pepper flakes.  Stir to thoroughly combine.

  2. In a skillet over medium high heat, add 1/2 the remaining oil and brown the sausage in two batches, adding more olive oil if necessary.

  3. Place sausage over the vegetables in the slow cooker, cover, and cook on LOW for 4-6 hours or on HIGH for 2-4 hours.  Remove sausage to a submarine roll and cover with the peppers and onions.  Repeat with remaining sausages and vegetables.
