Kim's Vegetable Beef Soup
Makes
8 to 10 servings
Prep Time: 10 min
Cooking Time: LOW 12 to 14 hrs or HIGH 4 to 6 hrs
Ingredients:
- 1 to 2 pounds beef shanks or short ribs
- 1
pound can tomatoes
- 2
carrots, sliced
- 3
ribs celery, sliced
- 2
medium onions, chipped
- 2
medium potatoes, chopped
- 3
cups water
- 1
teaspoon salt
- 4 - 6 whole peppercorns
- 5
cubes beef bouillon
- 2
packages (10-ounce) frozen mixed vegetables or it equivalent of your
favorite frozen, fresh or canned vegetables
Directions:
- In your slow cooker, combine, beef, tomatoes,
carrots, celery, onions, potatoes, water, salt, peppercorns, beef
bouillon, and vegetables.
- Cover and cook on LOW for 12 to 14 hours or on
HIGH for 4 to 6 hours.
