Kim's Vegetable Beef Soup

Prep Time: 10 min
Cooking Time: LOW 12 to 14 hrs or HIGH 4 to 6 hrs

Ingredients:

  • 1 to 2  pounds beef shanks or short ribs
  • 1         pound can tomatoes
  • 2         carrots, sliced
  • 3         ribs celery, sliced
  • 2         medium onions, chipped
  • 2         medium potatoes, chopped
  • 3         cups water
  • 1         teaspoon salt
  • 4 - 6    whole peppercorns
  • 5         cubes beef bouillon
  • 2         packages (10-ounce) frozen mixed vegetables or it equivalent of your favorite frozen, fresh or canned vegetables

Directions:

  1. In your slow cooker, combine, beef, tomatoes, carrots, celery, onions, potatoes, water, salt, peppercorns, beef bouillon, and vegetables.
  2. Cover and cook on LOW for 12 to 14 hours or on HIGH for 4 to 6 hours.
