Tracy's Tangy Pork Chops

Cooking Time: LOW 5 to 6 hrs + HIGH 30 min
Ingredients:
- 4 (1/2-inch
thick) pork chops
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 medium
onions, chopped
- 2 celery ribs,
chopped
- 1 large green
bell pepper, sliced
- 1 can
(14-1/2-ounce) stewed tomatoes
- 1/2 cup ketchup
- 2 Tablespoons
cider vinegar
- 2 Tablespoons
brown sugar
- 2 Tablespoons
Worcestershire sauce
- 1 Tablespoon
lemon juice
- 1 beef bouillon
cube
- 2 Tablespoon
cornstarch
- 2 Tablespoons
water
Directions:
- In slow cooker, place chops. Sprinkle with
salt and pepper.
- Add onions, celery, bell pepper, and
tomatoes.
- In a bowl, combine ketchup, vinegar, brown
sugar, Worcestershire sauce, lemon juice, and bouillon.
- Pour over vegetables in slow cooker.
- Cover and cook on LOW for 5 to 6 hours.
- In a small bowl, combine cornstarch and water
until smooth. Stir in slow cooker.
- Cover and cook on HIGH for 30 minutes or
until thickened.
- Serve over rice, if desired.
