Pork Roast with Sweet Potatoes and Onions

Cooking Time: LOW 8 hours


  • 2-1/2 - 4 pounds boneless pork loin roast
  • 1        large garlic clove, slivered
  • 5 - 6   sweet potatoes, cubed
  • 1        large onion, sliced
  • 3/4     cup broth, tomato juice, or water
  • 1-1/2  Tablespoon soy sauce
  • 1        Tablespoon cornstarch
  • 1        Tablespoon old water


  1. Make slits in roast and insert slivers of garlic.
  2. Put under broiler to brown.
  3. In slow cooker, put sweet potatoes. Add half of onions.
  4. Place roast on onions and sweet potatoes. Cover with remaining onions.
  5. In a bowl, combine broth and soy sauce and pour over roast.
  6. Cover and cook on LOW for 8 hours.
  7. Remove roast and vegetables from liquid.
  8. In a bowl, combine cornstarch and 2-Tablespoon water.
  9. Add to liquid in slow cooker.
  10. Turn on HIGH until thickened.
  11. Serve over sliced meat and vegetables.
