Spicy Crabmeat Tostadas

Baking Time: 5 minutes
Cooking Time: 10 minutes

Ingredients:

  •    6  corn tortillas
  •    1  Tablespoon vegetable oil
  • 1/4  cup minced red onion
  • 1/2  cup minced garlic
  •    1  cup drained canned diced tomatoes
  •    2  Tablespoons minced fresh cilantro leaves
  •    2  cups refrigerated pasteurized crabmeat
  •    2  Tablespoons lemon juice
  • 1/4  cup chopped red pepper
  •    1  cup shredded lettuce
  •    1  can (2.25 ounces) sliced pitted ripe olives, drained (optional)
  •        Chunky Salsa

Cooking Directions:

Preheat the oven to 350-degrees F. Place the tortillas onto 2 baking sheets.

  1. Bake the tortillas for 5 minutes or until they're golden brown and crisp.

  2. Heat the oil in a 3-quart saucepan over medium heat.

  3. Add the onion and cook for 5 minutes, stirring occasionally.

  4. Stir in the garlic, tomatoes, cilantro and crabmeat and cook for 5 minutes, stirring occasionally.

  5. Stir the lemon juice, pepper, lettuce and olives, if desired, in a medium bowl.

  6. Divide the lettuce mixture among the tostadas.

  7. Top with the crab mixture.

  8. Serve with the salsa.
