Grilled Frisco Beef Subs with Roasted Vegetable Relish

Cooking Time: 30 min.

Ingredients:

  • 1 - medium red, yellow or green bell pepper, cut into thin strips

  • 1 - medium onion, cut lengthwise into then wedges

  • 1 - Tablespoon olive oil

  • 1 - Tablespoon balsamic vinegar

  • 1/2 - teaspoon dried rosemary leaves, crushed

  • 1/4 - teaspoon pepper

  • 1-1/2 - pounds beef tri-tip or sirloin roast

  • 2 - Tablespoon mayonnaise

  • 1-2 - cloves garlic, crushed

  • salt and pepper, to taste

  • 6 - sourdough rolls (4-5 inches long), split

Directions:

Preheat oven to 450 F. Lightly spray 15x10-inch jelly roll pan with cooking spray.

  1. Place bell peppers and onion in pan.  In a mixing bowl, add oil, vinegar, rosemary and pepper. Drizzle over vegetables, tossing to coat.  Roast in oven 15-17 minutes or until vegetables are tender, stirring occasionally.  Meanwhile, in a small bowl, combine mayonnaise and garlic.

  2. Trim fat from beef. Place on grid over medium coals.  Grill approximately 20-25 minutes, to desired doneness, 140 F for medium-rare.  Let stand 10 minutes before carving into thin strips.

  3. Season with salt and pepper, if desired.  Spread mayonnaise mixture on bottom half of rolls.  Arrange beef over mayonnaise; top with vegetable relish.
