Bistro Turkey Sandwiches

- 2 - Tablespoon chopped sun-dried tomatoes
- 2 - Tablespoon chopped fresh basil leaves
- 1 - loaf French or Italian bread (about 20 in.
long), halved lengthwise
- 8 - ounces thinly sliced smoked turkey breast
- 1 - bunch arugula or spinach leaves, rinsed and
- In a large bowl, combine light mayonnaise,
tomatoes and basil.
- Spread mayonnaise mixture on bread, then top with
turkey and arugula.
- Slice and serve.
