Hot & Spicy Buffalo Chicken SandwichesPrep Time: 10 minutes
Cooking Time: 12 minutes

Ingredients

  • 4 - fresh boneless, skinless chicken breasts
  • 1/2 - cup blue cheese dressing
  • 1/4 - cup flour
  • 1/4 - cup butter, melted or 1/4 cup margarine, melted
  • 1 - tablespoon hot pepper sauce
  • 4 - lettuce leaves
  • 4 - Kaiser rolls, split and lightly toasted

Directions

  1. Use layers of plastic wrap or waxed paper and place chicken between them. 
  2. Using a rolling pin or meat mallet, pound the chicken lightly to flatten slightly.
    Place 3 tablespoons dressing in shallow dish or pie plate; reserve remaining dressing for sandwiches. 
  3. Coat chicken lightly with dressing; dip in flour to coat.
  4. Melt butter in a large nonstick skillet over medium heat. 
  5. Add chicken to skillet; turn to coat. 
  6. Cook, turning to brown evenly, 10 minutes or until done (internal temp 170�F). 
  7. Remove skillet from heat. Remove chicken from skillet.
  8. Drain butter from skillet except for 1 tablespoon; add hot pepper sauce and stir to mix with butter. 
  9. Return to heat. 
  10. Add chicken; turn to coat. 
  11. Cook chicken 1 to 2 minutes per side to set pepper sauce mixture.
  12. Serve chicken on toasted buns with lettuce. 
  13. Top with remaining blue cheese dressing. 
  14. Refrigerate leftovers.
