Barbecue Chicken on a Bun

Makes 6 sandwiches Sandwich Recipes from AlansKitchen.com

Cooking Time: 13 min.
Broiling Time: 2 min.

Ingredients:

  • Sauce Ingredients:
    • 1/2  cup red wine vinegar or cider vinegar
    • 1/4  cup firmly packed brown sugar
    •    1  can (8-ounce) tomato sauce
    •    1  can (6-ounce) tomato paste
    •    1  small onion, sliced 1/4-inch
    • 1/2  teaspoon liquid smoke
    • 1/4  teaspoon salt
    • 1/4  teaspoon pepper
  • Chicken Ingredients:
    • 2 1/2  cups shredded cooked chicken
    •       6  onion buns, cut in half
    •       1  medium green bell pepper, sliced into 12 rings
    •       3  ounces (3/4 cup) Deli Mozzarella Cheese, shredded

Cooking Directions:

  1. To prepare the sauce, in a 2-quart saucepan, cook for 8 to 10 minutes over medium heat, stirring occasionally, until slightly thickened and heated through.

  2. Stir in chicken. Continue cooking for 5 to 10 minutes until chicken is heated through.

Meanwhile, heat broiler.

  1. Place bottom halves of buns on baking sheet. Divide barbecue mixture evenly among bottom bun halves.

  2. Top with green pepper rings; sprinkle with cheese.

  3. Broil for 2 to 3 minutes 2 to 4 inches from heat until cheese is melted.

  4. Top with remaining bun halves.
