BarBQ Chicken On A BunSandwich Recipes from

Makes 4 hearty sandwiches

Prep Time: 10 min.
Grilling Time: 25 to 30 min.


  •    1 teaspoon seasoned salt
  • 1/8 teaspoon coarsely ground black pepper
  •    2 Whole boneless chicken -breasts, halved
  •    4 Buns, split and toasted
  •    4 slices Swiss cheese (1 oz ea)
  •    4 slices baked ham, warmed (1 oz ea)
  •       Lettuce leaves
  • Peach-Mint Salsa (see below)
    •       1 Fresh California peach, -chopped (about 2/3 cup)
    •    1/3 cup Chopped green onions
    •       1 Tomato, chopped
    • 1 1/2 Tablespoon chopped fresh mint
    •    1/4 teaspoon Chili powder
  • Savory Grilled Peaches (see below)
    • 4 Fresh California peaches

Chicken Sandwich Recipe Directions:

1) In a small bowl, combine seasoned salt and pepper.

2) Loosen one edge of chicken skin and rub seasoning mixture underneath skin.

3) Cook chicken skin-side down on covered grill over medium, indirect heat for about 25 to 30 minutes or until chicken is tender and no longer pink. Remove and discard skin.

4) Serve chicken on buns topped with cheese, ham, and salsa. Garnish with lettuce.

5) Serve with Savory Grilled Peaches.

Conventional Oven Method:

1) Prepare as above.

2) Roast skin-side up in 350-degrees F. oven for about 30 minutes or until chicken is tender and no longer pink.

3) Continue as directed.

Peach-Mint Salsa

Makes about 1 1/2 cups

Prep Time: 5 min.

1) In small bowl, combine peach, green onions, tomato, fresh mint, and chili powder.

2) Refrigerate leftovers.

Savory Grilled Peaches:

Makes 4 servings

Prep Time: 10 min.

1) Cut 4 fresh California peaches in half.

2) Cook on covered grill over medium, indirect heat 4 minutes.

3) Turn and cook an additional 4 minutes or until heated through.

Kitchen Tip:
Sandwiches are delicious served either hot or cold.
