Quick Pork Fajitas
Makes 4 servings

Prep Time: 5 min.
Cooking Time: 10 min.

Ingredients

  • 1 - pound Pork Tenderloin, thinly sliced
  • 3 - Tablespoons fajita seasoning or 3 - Tablespoons prepared fajita marinade
  • 1/2 - onion, sliced
  • 1/2 - green bell pepper, sliced
  • 4 - flour tortillas, warmed

Directions

  1. Toss pork pieces with fajita seasoning in a small bowl.
  2. Heat a large nonstick skillet over medium-high.
  3. Add pork pieces, onion and bell pepper.
  4. Stir-fry until just tender.
  5. Divide meat and vegetables among tortillas. Serve with salsa. Refrigerate leftovers.

Alanís Kitchen Tip: To make slicing easier, first place tenderloin in freezer for about 20 minutes.
