Hood River Egg Salad Sandwich
Makes 4 sandwiches
Ingredients:

6 - hard cooked eggs, peeled & diced

1/2 - cup apples, cored and diced

1/2 - cup mayonnaise
-
1 - teaspoon lemon juice
-
1 - teaspoon sugar
-
1/2 - teaspoon cinnamon
-
8 - slices nine-grain bread
Directions:
-
In a mixing bowl, add the eggs, apples, mayonnaise, lemon
juice, sugar, and cinnamon.

Using a tablespoon, place the egg
salad on bottom slice of nine-grain bread.
-
Place the top slice of bread on bottom. Using a sharp knife
cut bread in half and place on plate.
