Avocado & Egg Salad Sandwich

Makes 4 sandwiches
Prep Time: 15 minutes

Ingredients

• 6 - hard cooked eggs, peeled & diced

• 1/3 - cup celery diced

• 1/2 - cup mayonnaise

• 3 - tablespoons avocado, diced

• 1 - tablespoon lemon juice

• 1/4 - teaspoon salt

• 1/8 - teaspoon pepper

• 8 - slices honey-berry wheat bread

Directions

1. In a mixing bowl, add the eggs, celery, mayonnaise, avocado, lemon juice, salt, and pepper. 

2. Using a tablespoon, place the egg salad on bottom slice of honey-wheat berry bread. 

3. Place the top slice of bread on bottom. 

4. Using a sharp knife cut bread in half and place on plate.
