Salmon Egg Salad Sandwich

Ingredients:

  • 6 - hard cooked eggs (peeled & diced)
  • 2 - ounces salmon fillet (cook and diced)
  • 1 - cup Swiss or Gruyere cheese (shredded)
  • 1/2 - cup sautéed mushrooms (diced)
  • 1/2 - medium onion (diced)
  • 1/2 - cup mayonnaise
  • 2 - teaspoons lemon juice
  • 1 - teaspoon Worcestershire sauce
  • 3/4 - teaspoon salt
  • 1/8 - teaspoon pepper
  • 1/8 - teaspoon sugar
  • 1/8 - teaspoon nutmeg
  • 1/8 - teaspoon cayenne
  • 8 - slices honey-berry wheat bread

Directions:

  1. In a mixing bowl, add the eggs, salmon, mushrooms, onion, mayonnaise, lemon juice, Worcestershire sauce, salt, pepper, sugar, nutmeg, and cayenne.
  2. Using a tablespoon, place the egg salad on bottom slice of honey-wheat bread. 
  3. Place the top slice of bread on bottom. 
  4. Using a sharp knife cut bread in half and place on plate.
