Ranch Bacon & Egg Salad Sandwich
Makes 4 sandwiches (about 2 cups
salad)

Ingredients
- 6 - hard-cooked eggs
- 1/4 - cup diced celery
- 3 - Tablespoons crisp-cooked,
crumbled bacon*
- 1 - Tablespoon diced green
onion
- 1/4 - cup Ranch Dressing
- 8 - slices sandwich bread
- Lettuce and tomato (optional)
* Bacon pieces may also be used
Directions
- In a medium mixing bowl,
coarsely chop eggs and combine with celery, bacon, green
onion and dressing.
- Stir well and chill until just
before serving.
- Spread salad evenly on 4
pieces of bread; if desired, arrange lettuce and tomato on
egg salad.
- Top with remaining slices of
bread.
