Tomato Cheese
Bruschetta
Makes 24 servings
Ingredients

- loaf crusty Italian bread, cut diagonally into 1/2-inch think
slices (about 24 slices)

- cup olive oil

1
- can (14-1/2 ounces) petite diced tomatoes

- medium sweet onion, chopped

- Tablespoon garlic, minced

- cups Mozzarella Cheese, shredded
Directions
Preheat oven to 400° F.

Brush both sides of each
slice of bread with oil. Place slices on a baking sheet and
bake for 2 minutes on each side o until toasted.

In a mixing bowl, add
tomatoes, onion, garlic; season with salt and pepper to
taste. Mix.

Divide mixture and spoon
evenly onto each slice of toast.

Sprinkle with cheese.

Bake for 3 minutes or until
cheese melts.
