Tomato Cheese Bruschetta

Makes 24 servingsSandwich Recipes from AlansKitchen.com

Ingredients:

  •    1  loaf crusty Italian bread, cut diagonally into 1/2-inch think slices (about 24 slices)

  • 1/2  cup olive oil

  •    1  can (14-1/2 ounces) petite diced tomatoes

  •    1  medium sweet onion, chopped

  •    1  Tablespoon garlic, minced

  •    2  cups Mozzarella Cheese, shredded

Directions:

Preheat oven to 400-degrees F.

  1. Brush both sides of each slice of bread with oil. Place slices on a baking sheet and bake for 2 minutes on each side o until toasted.  In a mixing bowl, add tomatoes, onion, garlic; season with salt and pepper to taste.  Mix. 

  2. Divide mixture and spoon evenly onto each slice of toast. 

  3. Sprinkle with cheese.  Bake for 3 minutes or until cheese melts.
