Caramelized-Onion & Cheese Focaccia Wedges

Focaccia breads (10 to 12 inches in
diameter), cut horizontally in half
8 - slices (1 ounces each)
Colby-Monterey Jack cheese
Preheat oven to 350° F.
In a large skillet over medium to low
heat, melt butter. Add in the onions and sauté, stirring
occasionally, 15 to 20 minutes or until onions are brown and
caramelized. When done, remove from heat.
Place half of the cheese on bottom half of Focaccia bread. Top with onions and remaining cheese. Replace top half of Focaccia. Wrap tightly in aluminum foil.
for 15 to 20 minutes or until cheese is
melted. Allow to cool for 5 minutes. Cut into 8 wedges and serve.
