Mini Deli Lunch Pocket Biscuits

Baking Time: 25 min.

Ingredients

Biscuit

  • 1-3/4 - cups flour

  • 1/2 - teaspoon salt

  • 2 - teaspoons baking powder

  • 1/2 - teaspoon baking soda

  • 1/4 - cup butter, softened

  • 1/2 - cup Ranch dressing

  • 1/4 - cup milk

Sandwich Filling

  • 1 - cup chopped turkey, ham, salami, chicken or roast beef

  • 1/2 - cup shredded cheese

  • 3 - Tablespoons Ranch dressing

Directions

Preheat oven to 350 F. Line muffin tin with paper liners.

Biscuits

  1. In a bowl, whisk together flour, salt, baking powder and baking soda.  Blend in butter until mixture resembles coarse meal.

  2. Stir in Ranch and milk.  Drop a heaping tablespoon of biscuit mixture into each muffin cup, filling only halfway.

  3. Press the biscuit mixture flat.  Reserve extra mixture.

Sandwich Filling

  1. For sandwich filling, combine meat, cheese and Ranch.

  2. Spoon filling over biscuit mixture; top with a spoonful of remaining biscuit mixture and bake 25 minutes.
