Mediterranean Chicken Salad
Sandwich
As a filling for
sandwiches or an ingredient in other salads, chicken
salad is a great way to use leftover chicken.
In its simple form, diced or shredded chicken
(dark or white meat, or a combination of both), is mixed
with vegetables (diced onions
and celery
are frequently used), and all is moistened with a
dressing. The dressing is often based on mayonnaise
and/or mustard.
Other seasonings (which can include curry powder, dill
pickles, and in some cases apples
and/or raisins)
are added to taste.

Chicken Salad
is
thought to have been first served by Town Meats in
Wakefield, Rhode Island in 1863. The original owner, Liam
Gray, mixed his leftover chicken with mayonnaise,
tarragon, and grapes. This became such a popular item that
the meat market was converted to a deli which still stands
to this day.
