Breakfast Bacon Burritos
Makes
10 servings
Ingredients:
- 24 - slices (2 pkgs., 2.2 oz. each) Fully Cooked Premium
Precooked Bacon and diced
- 12 - eggs, lightly beaten
- 1 - can (7 oz.) diced green chiles, drained
- 1 - Tablespoon oil or butter
- 1 - can (16 oz.) refried beans
- Salsa (to taste)
- 2 - cups shredded Cheddar cheese
- 12 - (10") flour tortillas, warmed
- 2 - thinly sliced green onions (optional)
Directions:
- In large mixing bowl, combine eggs and drained green chiles.
Stir well.
- Heat oil or butter in a large skillet over medium heat.
- Add onions if desired; add diced bacon and stir for 45 seconds.
- Add eggs to skillet and cook for 4-6 minutes, stirring
occasionally until eggs are thoroughly cooked and set but still
moist.
- Top each tortilla with 2 tablespoons refried beans, about 1/3
cup egg mixture, salsa and 3 tablespoons cheese.
- Roll tortillas into burritos and serve.
