Weekend Breakfast Burritos

Ingredients:
- 1 - Tablespoon margarine or butter
- 8 - eggs, beaten
- 1/4 - teaspoon pepper
- 2 - cups diced Canadian bacon
- 6 - (8-inch) flour tortillas
- 6 - ounces (1-1/2 cups) shredded
Cheddar cheese
Direction:
Preheat oven to 400°F.
- Melt margarine in large skillet over
medium-high heat.
- Add eggs, pepper and bacon; cook and
stir about 5 minutes or until eggs are firm but moist.
- Spoon egg mixture evenly onto each
tortilla.
- Top each with 1 tablespoon cheese.
Roll up tortillas tightly.
- Place, seam side down, in ungreased
13x9-inch (3-quart) baking dish.
- Sprinkle remaining cheese over
tortillas.
- Bake for 10 to 15 minutes or until
cheese is melted.
- If desired, serve with sour cream
and salsa.
