Zesty Meatball Sandwich

Ingredients

  • Meatballs
    • 1 - pound ground beef
    • 1/2 - cup soft bread crumbs
    • 1 - egg
    • 2 - Tablespoons onion, finely chopped
    • 1 - clove garlic, minced
    • 1/2 - teaspoon salt
    • 1/8 - teaspoon pepper
  • 2 - Tablespoons water
  • 1/2 - onion, cut into thin strips
  • 1/2 - green bell pepper, cut into thin strips
  • 1-1/4 - cups prepared spaghetti sauce
  • 1/2 - teaspoon dried basil
  • 4 - hoagie rolls, split
  • 1/4 - cup shredded mozzarella cheese

Directions

Preheat oven to 350° F.

  1. In large bowl, add ground beef, bread crumbs, egg, onion, garlic, salt and pepper. 
  2. Mix lightly but thoroughly. 
  3. Shape into twelve 2-inch meatballs. 
  4. Place on rack in broiler pan. 
  5. Bake for 25 to 30 minutes to medium (160° F) doneness, until not pink in center and juices show no pink color.
    In large nonstick skillet, add 2 tablespoons water over medium heat and heat until hot. 
  6. Add onion and bell pepper. 
  7. Cook and stir 4 minutes or until vegetables are tender. 
  8. Add spaghetti sauce, basil and meatballs. 
  9. Heat through, stirring occasionally. 
  10. Serve in rolls; sprinkle with cheese.
